Sweet Potato Chicken Skillet

I didn’t plan meals this week, so I have been experimenting with what groceries we have. And ya know, they haven’t been terrible.

I have been doing a lot of chicken skillets, adding whatever veggies I can find, and serving it over a grain or good carb. This past dinner turned out pretty well, and took about 25 minutes. Boom.

All it took was 1 sweet potato, 1 medium sweet onion, 1 larger chicken breast, chipotle and maple syrup.

You’ll notice a theme in my recipes. . .chipotle and maple syrup are the stars of the show pretty often.

Start by putting a small pot of water on high heat, to get it boilin’.

Now give your onion and sweet potato a a choppin’.

Next just have your husband chop up the chicken breast, and start browning it over 1 TBSP olive oil or some pan spray. Whatevs.

Give it a turn, and then add your onions.

Throw your sweet potatoes into the boiling water for about 3-4 minutes.

Once they are almost tender, add them to the skillet with the other ingredients, and get them browning.

If is starts looking like this, you’re on the right track.

Add a rounded 1/4 tsp of chipotle (ground).

Then about 2-3 TBSP of pure maple syrup and cook, stirring often, for about 2 minutes.

Now pile it on your plate and enjoy. 🙂

D’s parents are coming to town today, so I made Spaghetti Squash Casserole and have it sitting in the fridge. Great make-ahead recipe. I might try my hand at my grandma’s bread later today. SO hard to make it like her, so we’ll see! 🙂
